This is a hard time of year to come up with dinners. My husband is saying he wants lighter fare and to start the New Year with more healthy dinners. Which is good and noble but my impulse in the dark cold days of January is to eat warm comfort food and look at the bitter cold drizzle outside my window.
This soup answers both those desires. It is a thick rich tomato soup, just begging to be consumed with a grilled cheese sandwich and is if full of blended veggies. Healthy, warm and comforting, and super quick and easy to make. A perfect January dinner.
There are a few precious weeks here when this soup is at its peak. These weeks when the temperature is cool enough that I begin to think ‘mmmm soup’ but the tomatoes you can find are still flavorful and juicy and not the strip-mined hard things that take over the grocery store in winter. These weeks are when this soup is amazing and really a must!
So… go and make it. It is like a grilled cheese sandwich on top of a bowl of really good tomato soup. What is not to like?
If you have been following me for a while you have probably noticed that I am a fan of soups. And as soon as I can even begin to imagine the weather might be turning a few degrees colder I am pulling out a soup pot and baking bread!
This tomato soup is delicious, creamy, and light enough for it to still be 70 degrees outside. You can tell I was raised at a much higher altitude; it is crazy to me that here, in the double digits of October, we still have mostly green leaves and it is regularly mid-high 70s. The weather is beautiful, don’t get me wrong, it is just not screaming October to me.
Even though I decorated. And there is a whole bag of fake spider webs just waiting for it to get a little closer to Halloween as well!.
