Yes I do realize this is the third chocolate chip cookie recipe I have posted. And I may have a problem but it is one I am willing to live with. I love chocolate chip cookies. Homemade chocolate chip cookies, fresh from the oven, with the chocolate all melty and the edges crisp and delicious – there are few things better in life.
So we have a Halloween version and now we have a Valentine’s Day version. For this one I highly recommend splurging and getting two different types of chocolate chips (I used good old Toll House and also the Ghirardelli 60% bittersweet ones). The different chocolates and shapes of the chips really make them seem even more decadent and Valentine’s-Day-special.
Maybe next I’ll come up with Saint Patrick’s Dar and Earth Day chocolate chip cookies…. or my favorite: Bad Day at Work Day chocolate chip cookies. They will make you feel better.
I do a lot of complicated cooking and baking this time of year. This weekend alone I am trying out Smitten Kitchen’s Chocolate Babka for two Chanukah parties coming up and the Chocolate Slides for my family’s Christmas party.
So it is really nice to find a recipe like this one. Simple, delicious, and people will think you worked for hours on it. That is if you want to share. Plus it is nice finally to use up the marshmallows from last summer’s s’mores.
I saw a meme last year as Fall was turning into Winter to the effect of “You have had your day Pumpkin but soon Peppermint will rule the land!” While I pretty much avoided the pumpkin spice craze this year I am embracing the peppermint. Wholeheartedly!
Plus I love mini-cupcakes. They are perfect to share with people and the perfect size to cram the whole thing in your mouth in one bite! Not that any respectable adult person would do that.
An adult person would talk about the unexpected textures between moist chocolate cake, creamy icing, and crunch candy cane pieces. But I won’t blame you if you just eat 4 or 5 after decorating the house in a holiday daze.
So I have an announcement. Oooo exciting! Yesterday I was sworn in as an AmeriCorps Vista. I am going to be spending the next year working with an inaugural Vista program helping build services and training for Holocaust survivors. This coming Tuesday is my first day on the job. As I am sure you can guess, I’m excited, nervous, and trying out a bunch of different outfits to figure out what is the best. Pretty normal I think.
And of course you know I’m baking something to celebrate.
Have you ever really wanted a chocolate chip cookie in cake form? If you haven’t then you are missing out, because that is what these are, but also so so much more. Buttery and soft and chocolatey… I found myself eating two a day! And, true confession, I ran out of icing before I ran out of cakes and I found I liked the un-iced ones better. Simple and delicious cake.
Though I used the Chocolate Sour Cream icing and it was very good on these cakes. I will never criticize you for wanting to go decadent!

It is better! I have finally found an icing that is homemade by me and works! Really! As I have mentioned before, I have never had success with a homemade icing. And there is something really sad about making a beautiful cake from scratch and then slathering on the canned stuff. Not that there is anything really wrong with the canned stuff. I have eaten gallons of it in my life.
But this is better.
