Hot Chocolate Mix

I do a lot of complicated cooking and baking this time of year.  This weekend alone I am trying out Smitten Kitchen’s Chocolate Babka for two Chanukah parties coming up and the Chocolate Slides for my family’s Christmas party.

So it is really nice to find a recipe like this one.  Simple, delicious, and people will think you worked for hours on it.  That is if you want to share.  Plus it is nice finally to use up the marshmallows from last summer’s s’mores.

Hot Chocolate Mix

From The Smitten Kitchen

1/2 cup sugar

1 tbsp cornstarch

3 ounces semi-sweet chocolate chopped (I used chocolate chips)

1/2 cup cocoa powder

1/4 tsp vanilla

1/4 tsp salt

 

Combine all the ingredients in a food processor and blend until powdery.

That’s it.  The mixture will keep in an airtight container for up to two months.

When you are ready to use it, heat one cup of milk (or any substitute you wish: coconut milk, almond milk, etc) over medium heat until steamy.

Add in three tablespoons of the mix and whisk another minute or two until the mixture begins to simmer and the mix is all dissolved.

Pour it into a mug and top with whipped cream, marshmallows, biscotti, whatever you like.

And be impressed that something this season was this easy to make!
