Round Flat Garlic Bread

Things get busy.  Things get hectic.  I am never sure how things get so busy.  I never plan for my days to get crazy.  Well, I rarely plan for my days to get crazy.  Somehow it just happens.

I’ll blame the beltway traffic.  I sometimes think the DC beltway traffic is the source of all my ills.  Plus it is easy to blame the traffic and not my time management skills deciding to take a holiday.

Anyway, if you have had a hectic day, and are anything like me, having a quick but tasty bread recipe in your back pocket is wonderful.  And this is a quick and tasty bread recipe.  Garlicky and delicious, just crying out for a comforting bowl of soup or saucy plate of spaghetti.  Enough to make you forget the traffic! (Seriously why was there traffic and how when we went around a turn did it all just magically disappear? There wasn’t an exit, the was same number of cars on the same number of lanes! Ahhhh!)

Round Flat Garlic Bread

A recipe from my mother who made it for me often.

This recipe also makes a great pizza dough and it is easy to double!

Don’t feel like garlic bread?  Try other spices and toppings.  Herbs D’Province is tasty and gives the bread a very different flavor. 

 

2 1/2 cups flour

1 1/4 tsp yeast (half a package)

1 tsp salt

Other spices (like: oregano, basil, garlic powder, Italian seasoning, etc.)

1 cup warm water

For the topping

olive oil

grated parmesan cheese

black pepper

salt

garlic powder

other spices which sound tasty and accompany your main dish (oregano, basil, rosemary, thyme, etc.)

 

In a large bowl mix together the flour, yeast, salt, and spices.

Dig a well in the center and pour in the warm water.

Stir well, then turn the dough out and knead it until it becomes smooth and elastic and feels slightly alive! About 5-8 minutes should do it.

Let the dough rise until doubled in bulk, about 1 hour.

Punch down the dough and roll it into an oval shape.  Transfer the dough onto a baking sheet or pizza stone.

Drizzle the top with olive oil and sprinkle with the cheese, pepper, salt, garlic, and other spices you may be using.

Bake in a preheated 425 degree oven for 20 minutes or until the edges are golden brown and the house smells really really good.
